Ingredients

Scale

Dip Ingredients

  • 1/2 cup pistachios (plus more for topping)
  • 8 oz feta cheese (packed in water, drained)
  • 1/3 bunch cilantro (rough chopped)
  • 3 tbsp fresh dill (rough chopped)
  • 3 scallions (green parts only, rough chopped)
  • 1.5 tbsp honey
  • 1 lemon (zest only)
  • Extra virgin olive oil (for drizzling, brand suggested: Bertolli)

Serving

  • Warm pita bread (for serving)

Instructions

  1. Make the Dip: Add the pistachios to a food processor and pulse for about 10 seconds to lightly chop them. Then add the drained feta, cilantro, dill, scallions, honey, and lemon zest. Process the mixture until smooth but still with some chunky bits to give texture.
  2. Plate and Serve: Transfer the whipped feta mixture to a serving plate. Create a well in the center of the dip. Pour extra virgin olive oil into the well, then sprinkle with additional pistachios for garnish. Serve the dip alongside warm pita bread for dipping.

Notes

  • Be sure to drain the feta cheese well to avoid a watery dip.
  • You can substitute pistachios with toasted walnuts or almonds for a different crunch.
  • Adjust the amount of honey according to your preference for sweetness.
  • This dip can be prepared ahead of time; store covered in the refrigerator and bring to room temperature before serving.
  • To make the dip smoother, process longer but avoid pureeing completely to maintain some texture.
  • Warm the pita bread just before serving to enhance flavor and softness.
