Instructions

- Assemble the cookies: Flatten each piece of dough into a disc shape. Take two dough discs and sandwich a Peep marshmallow between them. Use your fingers to carefully seal the seams so that the Peep is completely enclosed inside the dough. Repeat to make six sandwich cookies total.
- Add sprinkles: Pour sprinkles onto a plate. Press the tops of each dough sandwich cookie gently into the sprinkles to coat them.
- Arrange on baking sheet: Place two prepared dough balls on a parchment-lined baking sheet, spacing them about 3 inches apart to allow for spreading.
