Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to ensure it is fully heated before baking the pot pie.
  2. Make the filling: In a 10-inch ovenproof skillet, combine the diced chicken, Alfredo sauce, and frozen mixed vegetables. To the Alfredo sauce jar, add 1/4 cup of water, screw the lid on tightly, and shake it well to loosen the sauce before adding it to the skillet. Stir the mixture well and bring it to a simmer over medium heat, cooking for about 3 minutes until heated through.
  3. Cover with pastry: On a lightly floured surface, gently roll out the thawed puff pastry just enough to cover the top of the skillet, allowing a slight overhang. Place the puff pastry over the skillet and trim any excess. Cut 4 small slits in the pastry to allow steam to escape during baking.
  4. Bake the pot pie: Transfer the skillet to the preheated oven and bake for 25 to 30 minutes or until the puff pastry is golden brown and the filling is bubbly.
