Sugar Cookie Crust:
- 1 1/2 cups (188 grams) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (113 grams) unsalted butter, softened
- 3/4 cup (150 grams) granulated sugar
- 2 teaspoons lemon zest
- 1 1/2 teaspoons lemon extract
- 1 large egg (50 grams, out of shell)
Cheesecake Topping:
- 8 oz (225 grams) cream cheese, room temperature
- 1 1/3 cups (160 grams) powdered sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/3 cup (80 ml) heavy cream, cold
Toppings:
- 1 pound (453 grams) strawberries
- 6 oz (170 grams) blueberries
Instructions
- Preheat oven to 350°F (175°C).
- Spread dough on a parchment-lined baking sheet and bake for 15 minutes until lightly golden. Cool completely.
- Beat cream cheese until smooth.
- Spread cheesecake topping over the cooled crust and arrange strawberries and blueberries on top.
In a bowl, mix flour, baking powder, and salt. In another bowl, beat butter and sugar until fluffy. Add lemon zest, lemon extract, and egg; then combine with dry ingredients.
Gradually add powdered sugar, mix in vanilla, and whip cream until stiff peaks form. Fold whipped cream into the mixture until smooth.
