Instructions

  1. Prepare Chicken and Vegetables: Chop the chicken into bite-sized pieces and place them in a large mixing bowl. Slice the zucchini into rounds and dice the bell pepper, then add both to the bowl with the chicken.
  2. Marinate: Pour the Greek vinaigrette, Greek seasoning, and cracked pepper over the chicken and vegetables. Stir thoroughly to coat all pieces evenly with the marinade.
  3. Air Fry: Spritz the air fryer basket with nonstick spray to prevent sticking. Transfer the chicken and vegetable mixture into the air fryer basket. Cook at 400°F (204°C) for 10-12 minutes, shaking the basket halfway through to ensure even cooking. Check that the chicken reaches an internal temperature of 165°F (74°C) for safety.
  4. Assemble Bowls: Divide the cooked white rice evenly among four bowls. Top each serving with the air-fried chicken and vegetable mixture.
  5. Add Fresh Toppings: Arrange halved cherry tomatoes, chopped cucumbers, sliced red onion, kalamata olives, and crumbled feta cheese on top of the chicken and rice in each bowl.
  6. Finish with Tzatziki: Drizzle each bowl with approximately 2 tablespoons of creamy tzatziki sauce, or more to taste, to add a refreshing and tangy finish to the dish.
