Ingredients
Scale
Protein and Marinade
- 1 ½ pounds boneless, skinless chicken breasts
- ¼ cup Greek vinaigrette
- 1 tablespoon Greek seasoning
- 1 teaspoon cracked pepper
Vegetables
- 1 medium zucchini
- 1 medium bell pepper (any color)
- 1 cup cherry tomatoes, halved
- 2 mini cucumbers, chopped
- ½ red onion, halved and sliced into thin strips
Other Ingredients
- 2 cups cooked white rice
- ½ cup kalamata olives
- ½ cup crumbled feta cheese
- ½ cup tzatziki (more if desired)
Instructions
- Prepare Chicken and Vegetables: Chop the chicken into bite-sized pieces and place them in a large mixing bowl. Slice the zucchini into rounds and dice the bell pepper, then add both to the bowl with the chicken.
- Marinate: Pour the Greek vinaigrette, Greek seasoning, and cracked pepper over the chicken and vegetables. Stir thoroughly to coat all pieces evenly with the marinade.
- Air Fry: Spritz the air fryer basket with nonstick spray to prevent sticking. Transfer the chicken and vegetable mixture into the air fryer basket. Cook at 400°F (204°C) for 10-12 minutes, shaking the basket halfway through to ensure even cooking. Check that the chicken reaches an internal temperature of 165°F (74°C) for safety.
- Assemble Bowls: Divide the cooked white rice evenly among four bowls. Top each serving with the air-fried chicken and vegetable mixture.
- Add Fresh Toppings: Arrange halved cherry tomatoes, chopped cucumbers, sliced red onion, kalamata olives, and crumbled feta cheese on top of the chicken and rice in each bowl.
- Finish with Tzatziki: Drizzle each bowl with approximately 2 tablespoons of creamy tzatziki sauce, or more to taste, to add a refreshing and tangy finish to the dish.
Notes
- For even quicker prep, use pre-cooked rice or leftover rice.
- You can substitute the Greek vinaigrette with olive oil, lemon juice, and dried oregano if preferred.
- Adjust seasoning and tzatziki quantity based on personal taste.
- Make sure to not overcrowd the air fryer basket for even cooking—cook in batches if necessary.
- Use a meat thermometer to ensure chicken is safely cooked to 165°F.
- This recipe is customizable with other vegetables like mushrooms or red bell peppers.
