Description

Apple Pie Bombs are a delightful twist on classic apple pie, delivering sweet, cinnamon-spiced apples inside a golden, buttery biscuit crust. These handheld treats are easy to make using store-bought biscuit dough and come together in under 40 minutes, making them perfect for quick desserts, snacks, or potluck treats.

Ingredients

Scale

For the Apple Filling:

  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter
  • 1/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 2 tablespoons water

For the Dough:

  • 1 can refrigerated biscuit dough (8 biscuits)

For Coating:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Prepare the apple filling: In a medium saucepan over medium heat, melt 2 tablespoons of butter. Add the diced apples, 1/3 cup granulated sugar, and 1 teaspoon cinnamon. Cook for 4-5 minutes, stirring occasionally, until the apples are softened. In a small bowl, combine the cornstarch and water to make a slurry, then pour it into the saucepan. Cook an additional 1-2 minutes until the filling has thickened. Remove from heat and let cool slightly.
  2. Preheat the oven and prepare the baking sheet: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  3. Prepare the dough: Separate the biscuit dough into 8 individual pieces. Use your hands or a rolling pin to flatten each biscuit to about 1/4-inch thickness, creating enough surface to hold the apple filling.
  4. Assemble the apple pie bombs: Place about 1 tablespoon of the apple filling in the center of each flattened biscuit. Carefully fold the edges of the dough over the filling, pinching to seal tightly and form a ball. Ensure there are no gaps to prevent leaks during baking.
  5. Coat with butter and cinnamon sugar: In a small bowl, mix 1 cup sugar and 1 tablespoon cinnamon. Dip each dough ball into the melted butter, then roll it in the cinnamon-sugar mixture until fully coated. Arrange the prepared balls seam-side down on the baking sheet.
  6. Bake: Bake in the preheated oven for 12-15 minutes, or until the apple pie bombs are puffed and golden brown.
  7. Serve and store: Let the apple pie bombs cool for a few minutes before serving for the best texture. Store leftovers in an airtight container at room temperature for up to 2 days.

Notes

  • Try using other firm apples like Granny Smith or Honeycrisp for a different flavor.
  • Let the apple filling cool before assembling to avoid making the dough sticky.
  • You can use crescent roll dough if biscuit dough is unavailable.
  • Serve with caramel sauce or vanilla ice cream for an extra treat.
  • Best enjoyed warm, but they can be reheated in the microwave for a few seconds.
