- 2 limes, juiced

Sauteed Vegetables:

- 1 jalapeño, minced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 1 red onion, diced
- 1 teaspoon garlic, minced
- 1 lime
Additional Ingredients:
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes
- 4 slices pepper jack cheese
- 1 tablespoon cilantro, freshly chopped
- Splash of olive oil
Instructions
- Marinate the Chicken: Place chicken into a casserole dish or bowl. Prepare marinade by combining orange juice, lime juice, minced jalapeño, garlic, and salt. Pour marinade over chicken, cover, and refrigerate for 2 hours.
- Saute the Vegetables: In a skillet, sauté jalapeño, bell peppers, red onion, and garlic. Squeeze lime juice over the vegetables and season with salt. Set aside.
- Prepare the Chicken: Preheat oven. Season chicken with a spice mix of salt, pepper, paprika, cumin, and red pepper flakes. Sear chicken in a skillet, add sauteed vegetables, top with cheese, and bake.
- Finish and Serve: Garnish with chopped cilantro before serving.
