Seasonings and Optional
- 1 ½ – 2 teaspoons cajun or creole seasoning (adjust for desired spiciness)
- 8 slices bacon, cooked and chopped (optional)

Instructions
- Preheat Oven: Preheat the oven to 400˚F and position the oven rack in the middle of the oven for even baking.
- Prepare Baking Sheet: Line a half sheet baking pan with foil and lightly grease it with nonstick cooking spray to prevent sticking.
- Prepare Jalapenos: Slice each jalapeno pepper lengthwise and carefully remove the seeds and membranes using a spoon, scooping upwards to avoid the spicy parts.
- Make Cheese Mixture: In a large bowl, combine softened cream cheese, sharp cheddar cheese, monterey jack cheese, cajun or creole seasoning, and chopped bacon if using. Stir with a wooden spoon or rubber spatula until creamy and well combined. Alternatively, use a handheld mixer to speed up the process.
- Stuff Jalapenos: Use a spoon to fill each jalapeno half with the cheese mixture, distributing it evenly.
- Top and Bake: Place the stuffed jalapenos on the prepared baking sheet and sprinkle about 1 teaspoon of extra monterey jack cheese atop each. Bake in the preheated oven for 20 to 25 minutes until bubbly and golden on top.
- Optional Broiling: If desired, for extra browning, broil the poppers for 1 to 2 minutes but watch carefully to prevent burning.
