Baked Jalapeno Poppers Recipe

  • Author: Mariam
  • Total Time: 40 minutes
  • Yield: 24 to 28 poppers 1x

Description

These Baked Jalapeno Poppers are a spicy and creamy appetizer featuring roasted jalapeno halves stuffed with a blend of cream cheese, sharp cheddar, monterey jack cheese, cajun seasoning, and optional crispy bacon. Baked to golden perfection, they offer a fantastic combination of heat and cheesy goodness, perfect for parties or game day snacks.

Ingredients

Scale

Jalapeno Peppers

  • 1214 large jalapeno peppers, stemmed, seeded, and halved

Cheese Filling

  • 8 oz. cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded monterey jack cheese, plus more for topping (about 1 teaspoon per popper)

Seasonings and Optional

  • 1 ½2 teaspoons cajun or creole seasoning (adjust for desired spiciness)
  • 8 slices bacon, cooked and chopped (optional)

Additional

  • Nonstick cooking spray for greasing baking sheet

Instructions

  1. Preheat Oven: Preheat the oven to 400˚F and position the oven rack in the middle of the oven for even baking.
  2. Prepare Baking Sheet: Line a half sheet baking pan with foil and lightly grease it with nonstick cooking spray to prevent sticking.
  3. Prepare Jalapenos: Slice each jalapeno pepper lengthwise and carefully remove the seeds and membranes using a spoon, scooping upwards to avoid the spicy parts.
  4. Make Cheese Mixture: In a large bowl, combine softened cream cheese, sharp cheddar cheese, monterey jack cheese, cajun or creole seasoning, and chopped bacon if using. Stir with a wooden spoon or rubber spatula until creamy and well combined. Alternatively, use a handheld mixer to speed up the process.
  5. Stuff Jalapenos: Use a spoon to fill each jalapeno half with the cheese mixture, distributing it evenly.
  6. Top and Bake: Place the stuffed jalapenos on the prepared baking sheet and sprinkle about 1 teaspoon of extra monterey jack cheese atop each. Bake in the preheated oven for 20 to 25 minutes until bubbly and golden on top.
  7. Optional Broiling: If desired, for extra browning, broil the poppers for 1 to 2 minutes but watch carefully to prevent burning.
  8. Cool and Serve: Allow the poppers to cool for a few minutes on the baking sheet before serving to avoid burning your mouth and to let flavors settle.

Notes

  • Removing seeds and membranes reduces heat; keep some for more spice.
  • Bacon is optional but adds a smoky flavor and texture contrast.
  • Use gloves when handling jalapenos to avoid skin irritation.
  • Serve with ranch or sour cream dip for additional creaminess.
  • Leftovers can be refrigerated and reheated in the oven for best texture.
