  • Diet: Vegetarian

Description

A wholesome and comforting banana baked oatmeal recipe that’s naturally sweetened with ripe bananas and pure maple syrup. This easy-to-make breakfast dish combines old-fashioned rolled oats, warm spices, and optional walnuts for added texture, baked to a soft, tender finish. Perfect for meal prep or a cozy morning treat, it can be topped with peanut butter, fresh berries, or extra maple syrup.

Ingredients

Scale

Wet Ingredients

  • 1 and 1/3 cups (320ml) milk (dairy or nondairy)
  • 2 large eggs
  • 1/3 cup (80ml) pure maple syrup
  • 1/4 cup (4 Tbsp; 56g) unsalted butter, melted and slightly cooled
  • 1 cup (230g) mashed banana (about 2 large ripe bananas)
  • 1 teaspoon pure vanilla extract

Dry Ingredients

  • 3 cups (255g) old-fashioned whole rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Optional

  • 3/4 cup (90g) chopped walnuts
  • Optional toppings: melted peanut butter, maple syrup, bananas, berries

Instructions

  1. Prepare your oven and pan: Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Spray a 9×9-inch square pan or an 11×7-inch rectangle pan with nonstick spray. The pan should hold about 3 quarts; avoid using smaller pans like 8×8-inch as they will be too small.
  2. Mix wet ingredients: In a large bowl, whisk together the milk, eggs, maple syrup, melted butter, mashed banana, and vanilla extract until fully combined and smooth.
  3. Add dry ingredients: To the wet mixture, add the rolled oats, baking powder, ground cinnamon, and salt. Whisk to combine everything thoroughly. Then gently fold in the chopped walnuts if using.
  4. Pour and bake: Pour the oatmeal mixture into the prepared baking pan, spreading it evenly. Bake in the oven for 30–35 minutes, or until the center is almost set for a soft and tender texture. If you prefer a drier and firmer baked oatmeal, bake a few minutes longer until the center is fully set.
  5. Cool and serve: Let the baked oatmeal cool in the pan for about 5 minutes before serving. Slice or scoop portions and serve with optional toppings like melted peanut butter, extra maple syrup, banana slices, or fresh berries.
  6. Storage: Cover any leftovers tightly and refrigerate for up to one week. Reheat gently before serving.

Notes

  • You can use any milk (dairy or nondairy) according to your preference or dietary needs.
  • For a nut-free version, omit the walnuts.
  • If using a 9×13-inch pan, baking time may vary slightly; watch the center closely to avoid overbaking.
  • This baked oatmeal can be served warm or at room temperature and makes great meal prep for busy mornings.
  • Adjust sweetness by varying the amount of maple syrup or using ripe bananas for natural sweetness.
