  • 2 cups Sweet Corn (frozen or fresh)
  • 2 tbsp Corn starch
  • 2 tbsp All Purpose Flour (Plain flour)
  • 2 tbsp Rice Flour
  • ½ tsp Salt (to taste)

  • 1 tbsp Peri Peri Seasoning
  • 1 medium Onion (peeled & chopped finely)
  • 1 Green Chilli (chopped finely)
  • 3 tbsp Coriander Leaves (finely chopped)

  1. Step 1: If using frozen sweet corn, microwave it for 1 minute. For fresh corn, boil in water for 4 to 5 minutes. Drain completely to remove all water.
  2. Step 2: In a bowl, combine the corn with salt, black pepper powder, rice flour, all purpose flour, and corn starch. Toss well to coat. Place the mixture in a fine mesh sieve and shake gently to remove excess flour.

Tips & Variations

  • Use frozen corn for convenience or fresh corn for a sweeter taste.
  • Adjust the peri peri seasoning quantity to control spiciness according to your preference.
  • To make it gluten-free, ensure all flours used are gluten-free or substitute with alternatives like chickpea flour.
  • Serve with a squeeze of extra lemon juice for an added zing.

Storage

Crispy corn is best enjoyed immediately as it loses its crunch quickly. If you must store leftovers, keep them in an airtight container at room temperature for up to 1 day. Reheating in a hot oven or air fryer for a few minutes can help restore some crispness, but it won’t be as crunchy as freshly made.

How to Serve

FAQs

Can I bake the corn instead of deep frying?

Baking will reduce oil usage but won’t produce the same level of crispiness as deep frying. If baking, toss the coated corn with a little oil and bake at a high temperature, turning occasionally, until golden and crisp.

What if I don’t have peri peri seasoning?

You can substitute peri peri seasoning with a mix of chili powder, paprika, garlic powder, and a pinch of salt to achieve a similar spicy and smoky flavor.

Scale

Main Ingredients

  • 2 cups Sweet Corn (frozen or fresh)
  • 2 tbsp Corn Starch
  • 2 tbsp All Purpose Flour (Plain Flour)
  • 2 tbsp Rice Flour
  • ½ tsp Salt (to taste)
  • ½ tsp Black Pepper Powder
  • 1 tbsp Peri Peri Seasoning
  • 1 medium Onion (peeled & chopped finely)
  • 1 Green Chilli (chopped finely)
  • 3 tbsp Coriander Leaves (finely chopped)
  • 2 tsp Lemon Juice
  • Refined Sunflower Oil (for deep frying)

Instructions

  1. Prepare the Corn: If using frozen sweet corn, microwave it for 1 minute to thaw and cook slightly. For fresh corn, boil the kernels in water for 4 to 5 minutes, then strain thoroughly to remove all water.
  2. Mix the Coating: In a bowl, combine the cooked corn kernels with salt, black pepper powder, rice flour, all purpose flour, and corn starch. Toss well to coat evenly, then place in a fine mesh sieve and shake gently to remove excess flour.
  3. Deep Fry the Corn: Heat a large amount of refined sunflower oil until it is super hot. Carefully drop the coated corn kernels into the hot oil. Avoid stirring immediately; let the corn fry on high heat for about 1 minute until bubbles subside. Continue frying for an additional 3 to 4 minutes or until the corn turns golden brown and super crispy.
  4. Drain Excess Oil: Use a slotted spoon to strain the fried corn and spread it on a paper towel to absorb excess oil. Transfer the corn to a bowl or sieve.
  5. Toss with Seasonings: Add peri peri seasoning, finely chopped onion, green chillies, coriander leaves, and lemon juice to the fried corn and toss everything together thoroughly.
  6. Serve Immediately: Crispy corn tends to lose its crispiness over time, so enjoy this snack immediately for the best texture and flavor.

Notes

  • Use frozen corn for convenience, but fresh corn can be boiled instead.
  • Properly draining the corn after boiling or microwaving prevents excess moisture, helping achieve crispiness.
  • Shaking off excess flour before frying is essential to avoid clumps.
  • Maintain hot oil temperature for the best frying results; too low heat leads to soggy corn.
  • Consume immediately as the crispiness diminishes over time.
  • Peri peri seasoning adds the spicy, tangy flavor typical of Barbeque Nation style; adjust quantity based on spice preference.
