- 1 Green Chilli (chopped finely)
- 3 tbsp Coriander Leaves (finely chopped)
- 2 tsp Lemon Juice
- Refined Sunflower Oil (for deep frying)
Instructions
- Prepare the Corn: If using frozen sweet corn, microwave it for 1 minute to thaw and cook slightly. For fresh corn, boil the kernels in water for 4 to 5 minutes, then strain thoroughly to remove all water.
- Mix the Coating: In a bowl, combine the cooked corn kernels with salt, black pepper powder, rice flour, all purpose flour, and corn starch. Toss well to coat evenly, then place in a fine mesh sieve and shake gently to remove excess flour.
- Deep Fry the Corn: Heat a large amount of refined sunflower oil until it is super hot. Carefully drop the coated corn kernels into the hot oil. Avoid stirring immediately; let the corn fry on high heat for about 1 minute until bubbles subside. Continue frying for an additional 3 to 4 minutes or until the corn turns golden brown and super crispy.
- Drain Excess Oil: Use a slotted spoon to strain the fried corn and spread it on a paper towel to absorb excess oil. Transfer the corn to a bowl or sieve.
