Meatballs

  • 1 pound ground beef (around 80/20)
  • 1/3 cup rolled oats
  • 1/4 cup whole milk
  • 1/4 cup minced onion
  • 2 cloves garlic (minced)
  • 1 large egg
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons vegetable oil

BBQ Sauce

  • 1/2 cup ketchup
  • 1 packet onion soup mix (less to taste as it’s fairly salty)
  • 2 tablespoons water

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit to ensure it’s ready for baking the meatballs once browned.
  2. Mix the meatball ingredients: In a large bowl, thoroughly combine the ground beef, rolled oats, whole milk, Worcestershire sauce, egg, minced onion, and minced garlic until well mixed.
  3. Form the meatballs: Shape the mixture into 12 evenly sized, loosely compacted meatballs to ensure uniform cooking.
  4. Heat the oil: Place a large, oven-safe skillet over medium heat and add the vegetable oil to warm it up before cooking the meatballs.
  5. Brown the meatballs: Add the meatballs to the skillet, in batches if necessary to avoid crowding, and cook them for about 3 minutes per side until they develop a nice golden-brown crust.
  6. Prepare the BBQ sauce: While the meatballs are browning, whisk together the ketchup, water, and onion soup mix in a small bowl to create the tangy BBQ sauce.
  7. Apply the sauce and bake: Spoon the prepared BBQ sauce over the browned meatballs in the skillet, then transfer the skillet to the preheated oven. Bake for 20 minutes until the meatballs are fully cooked and the sauce is bubbly. Alternatively, transfer the meatballs to a casserole dish and cover with the sauce before baking.
