Beef Filling
- 1 pound lean ground beef
- ½ yellow onion, minced
- 2 cloves garlic, minced
- 1 can diced green chiles (4 ounces)
- 2 tablespoons Taco Seasoning

- 16 corn tortillas (6 inch)
- Shredded Mexican blend cheese, as needed
- Olive oil, for brushing
Instructions
- Cook the Beef: In a large skillet over medium-high heat, cook the lean ground beef and minced yellow onion until the beef is browned and nearly cooked through, breaking the meat apart as it cooks.
- Saute Aromatics: Add the minced garlic, diced green chiles, and taco seasoning to the skillet. Continue sautéing until all ingredients are well combined and the beef is fully cooked. Remove from heat and set aside.
- Prepare Tortillas: Preheat the oven to 350°F (175°C). Line a baking sheet with foil and brush it lightly with olive oil. Working in batches, place some corn tortillas in a single layer on the baking sheet. Brush the tops lightly with olive oil and bake for 3-4 minutes to soften the tortillas. Repeat until all tortillas are softened.
- Assemble Taquitos: Take one softened tortilla and place about two tablespoons of the beef filling near the lower third of the tortilla. Sprinkle some shredded Mexican blend cheese over the filling. Roll the tortilla tightly around the filling, placing the seam side down on the baking sheet. Repeat the process with the remaining tortillas and filling.
- Bake Taquitos: Bake the assembled taquitos in the preheated oven for 15 minutes. Then, remove from the oven and turn each taquito over. Continue baking for an additional 10 minutes until the taquitos are crispy and golden brown.
- Serve: Remove from the oven and serve hot with fresh cilantro, sour cream, salsa, or your favorite dipping sauces for added flavor.
