These homemade air fryer egg rolls are filled with a delicious mixture of mushrooms, turkey, and Asian-inspired flavors, all wrapped up in a crispy shell. Perfect for a tasty appetizer or light meal!

Filling:
- 1 tablespoon olive oil
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 pint shiitake mushrooms, chopped
- 1/4 cup chopped scallions
- 2 cups broccoli slaw
- 1/2 pound ground turkey
- 1 teaspoon fish sauce
- 2 tablespoons tamari
- 1 tablespoon sesame oil
Wrapping:
- 12–14 egg roll wrappers
Instructions
- Make the filling: Heat olive oil in a skillet, add ginger and garlic paste, mushrooms, scallions, and cook until soft. Add slaw, then move veggies to the side and cook turkey with tamari, fish sauce, and sesame oil. Set aside to cool.
- Assemble the egg rolls: Lay out a wrapper, add filling, fold bottom corner over filling, roll away, fold and seal ends. Repeat for all wrappers.
- Air Fry: Preheat air fryer to 400°F, spray basket with olive oil, place egg rolls in a single layer, spray with more oil. Cook for 6 minutes, flip, spray, and cook for 4-5 more minutes. Serve warm.
