Fruit and Cheese:
- 1 pint of fresh blueberries
- 2 peaches, finely diced
- 2 Persian cucumbers, thinly sliced
- 1/2 cup crumbled feta cheese
Lemon Basil Vinaigrette:
- 3 tablespoons freshly squeezed lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 1 tablespoon olive oil
- 1 tablespoon finely chopped basil
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Mix Ingredients: In a large serving bowl, mix together the blueberries, diced peaches, sliced cucumbers, and crumbled feta.
- Prepare Vinaigrette: In a jar with a lid or a measuring cup, combine the lemon juice, Dijon mustard, maple syrup, olive oil, chopped basil, salt, and pepper. Shake vigorously or whisk until the vinaigrette is well blended.
- Toss Salad: Pour the vinaigrette over the salad ingredients and gently toss everything together. Adjust seasoning to taste and garnish with additional basil if desired.
- Serve: Serve immediately or cover and refrigerate the salad until ready to serve.
