Sauce

  • 1 (12-oz.) can evaporated milk (1½ cups)
  • 2 (5.3-oz.) packages Garlic & Herb Boursin cheese
  • ½ tsp. kosher salt, plus more to taste

Instructions

  1. Cook the Pasta: In a large pot of boiling salted water, cook the fusilli pasta, stirring occasionally, until al dente per the package instructions. Reserve ½ cup of the pasta cooking water before draining the pasta thoroughly.
  2. Prepare the Sauce: While the pasta cooks, heat evaporated milk in a large saucepan over medium-low heat until it begins to simmer. Add the Garlic & Herb Boursin cheese and stir continuously until the cheese has fully melted and combined with the milk, about 3 minutes.
  3. Thicken the Sauce: Return the mixture to a gentle simmer and continue stirring occasionally for another 2 to 3 minutes until the sauce becomes slightly thickened and develops a glossy sheen. Season with ½ teaspoon kosher salt.
  4. Combine Pasta with Sauce: Add the cooked pasta to the cheese sauce along with a splash of the reserved pasta water. Gently stir over medium-low heat, adding more pasta water as needed to ensure the sauce evenly coats the pasta. Adjust seasoning with additional salt to taste.

  • Reserve pasta water as it helps loosen the sauce and improves the texture.
  • Use Garlic & Herb Boursin for the signature flavor; other Boursin varieties will alter the taste.
