This Breakfast Sweet Potato recipe combines the goodness of sweet potatoes with savory fillings and eggs, creating a delicious and satisfying breakfast meal.

Sweet Potatoes:
- 3 large sweet potatoes, for baking
Filling:
- ½ cup cooked and crumbled bacon
- 2 tablespoons unsalted butter
- ¼ cup shredded white cheddar cheese
For Topping:
- 6 large eggs
- ¼ teaspoon black pepper
- ½ teaspoon salt
- Minced scallion (optional)
Instructions
- Preheat oven. Preheat the oven to 350°F.
- Poke holes into potato. Using a fork, prick the sweet potato a few times on each side to create heat vents.
- Coat potatoes with oil and salt and bake. Coat each potato with canola oil and salt and bake for 60-90 minutes. Potatoes should be fork-tender when done.
- Slice potato in half. Using a sharp knife, slice each sweet potato in half lengthwise.
- Remove center of potato. Using a spoon, remove the center of the potato and place into a large mixing bowl. Be very careful not to tear the potato skin.
- Lay potato shell on baking sheet. Lay the hollowed-out shells on a baking sheet.
- Add bacon, butter, and cheese to the potato. To the bowl of potatoes, add cooked bacon, butter, and shredded cheese. Mix together.
- Fill potato skins with the filling. Fill the hollowed-out potato skins with the filling.
- Create a well in the middle of the filling. Create a well.
- Top with egg, salt and pepper, and bake. Top each potato with raw egg, salt, and pepper and bake for 15 to 20 minutes or until the egg is set and the potato is warmed through. Top with minced scallion (optional).
Notes
- For a vegetarian option, omit the bacon.
- You can customize the fillings with your favorite ingredients like diced peppers or spinach.
