- 1/2 cup quick cooking oatmeal
Wet Ingredients:
- 1/2 cup unsalted butter (*softened to room temp, plus 1–2 tsp. for greasing baking pan)
- 1/2 cup granulated sugar
- 1 whole egg
- 2 egg yolks
- 1 cup unsulfered molasses
- 1 cup hot water (*about 130-150℉)
Instructions
- Preheat Oven: Preheat oven to 350℉ and grease a 9 1/2 x 12 inch rectangle pan with butter.
- Mix Dry Ingredients: In a large mixing bowl, combine flour, baking soda, cinnamon, ginger, salt, and oatmeal.
- Cream Butter and Sugar: In a stand mixer, cream together softened butter and sugar. Add egg yolks and egg, beat until light and fluffy.
- Combine Ingredients: Gradually mix in molasses, water, and dry ingredients into the butter mixture, scraping down the sides after each addition.
- Bake: Pour batter into the greased pan and bake for 45 minutes or until a tester comes out clean.
- Serve: Let cool, then serve with whipped cream and a sprinkle of cinnamon.
