Description

Broonie is a traditional Scottish cake that is rich with the flavors of molasses, cinnamon, and ginger. This dense and moist treat is perfect for enjoying with a cup of tea or coffee.

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 3/4 tsp salt
  • 1/2 cup quick cooking oatmeal

Wet Ingredients:

  • 1/2 cup unsalted butter (*softened to room temp, plus 12 tsp. for greasing baking pan)
  • 1/2 cup granulated sugar
  • 1 whole egg
  • 2 egg yolks
  • 1 cup unsulfered molasses
  • 1 cup hot water (*about 130-150℉)

Instructions

  1. Preheat Oven: Preheat oven to 350℉ and grease a 9 1/2 x 12 inch rectangle pan with butter.
  2. Mix Dry Ingredients: In a large mixing bowl, combine flour, baking soda, cinnamon, ginger, salt, and oatmeal.
  3. Cream Butter and Sugar: In a stand mixer, cream together softened butter and sugar. Add egg yolks and egg, beat until light and fluffy.
  4. Combine Ingredients: Gradually mix in molasses, water, and dry ingredients into the butter mixture, scraping down the sides after each addition.
  5. Bake: Pour batter into the greased pan and bake for 45 minutes or until a tester comes out clean.
  6. Serve: Let cool, then serve with whipped cream and a sprinkle of cinnamon.
