Description

This Brown Sugar Peach Cake is a delightful and moist dessert combining the sweetness of fresh peaches and rich brown sugar frosting. Featuring a tender yellow cake base studded with juicy peach pieces and topped with a creamy brown sugar glaze, this cake is perfect for showcasing seasonal stone fruits and making any occasion special.

Ingredients

Scale

Cake:

  • 15 ounces yellow cake mix (such as Duncan Hines)
  • 3 large eggs (or as specified by your cake mix)
  • 1/3 cup vegetable oil (or as specified by your cake mix)
  • 1/2 cup peach nectar or peach juice
  • 1 lb peeled and chopped fresh peaches (about 34 peaches)
  • Drop of orange food coloring (optional)

Brown Sugar Frosting:

  • 1/2 cup unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 1/2 cups confectioners’ sugar, sifted

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cake.
  2. Prepare Batter: In a mixing bowl, blend the cake mix, eggs, vegetable oil, peach nectar, and orange food coloring (if using) until well combined. Gently fold in the chopped peaches to evenly distribute them throughout the batter.
  3. Bake the Cake: Pour the batter into a lightly sprayed 9×12-inch baking pan. Bake in the preheated oven for about 28 minutes, or until a toothpick inserted into the center comes out with moist crumbs but no raw batter.
  4. Make Brown Sugar Frosting: While the cake is baking, combine the butter, heavy cream, and brown sugar in a saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Remove from heat, then add the vanilla extract and sifted confectioners’ sugar. Whisk vigorously until the frosting is smooth and lumps have disappeared. Return to low heat if necessary to maintain smoothness.
  5. Frost the Cake: Once the cake is out of the oven and slightly cooled but still warm, pour the brown sugar frosting evenly over the cake. Try to coat it evenly on the first pour because the frosting will set quickly and will be difficult to spread without cracking.
  6. Let Frosting Set: Allow the frosting to harden at room temperature, or place the cake in the refrigerator to speed up the setting process. Once set, cut into squares and serve.

Notes

  • Replacing peach nectar with peach juice or concentrate can alter sweetness; adjust sugar as necessary.
  • Using fresh, ripe peaches is recommended for best flavor and texture.
  • Orange food coloring is optional and mainly for enhancing the cake’s appearance.
  • Ensure to sift confectioners’ sugar to avoid lumps in the frosting.
  • For a lighter variation, you can substitute part of the heavy cream with milk, though frosting texture may differ.
  • Store cake covered in the refrigerator to maintain freshness and keep the frosting firm.
