Ingredients
Scale
For the Dough
- 3/4 cup warm water (around 110 degrees)
- 1 teaspoon sugar
- 2 1/4 teaspoons active dry yeast
- 2 cups all-purpose or bread flour
- 3 tablespoons olive oil
- 1/2 teaspoon salt
For the Topping
- 4 ounces cream cheese (room temperature)
- 1 teaspoon ranch seasoning mix
- 1 cup chopped cooked chicken
- 1/2 cup buffalo sauce
- 8 ounces shredded mozzarella cheese
- 1 tablespoon chopped green onions
For Serving
- Ranch dressing or blue cheese dressing (optional)
Instructions
- Bloom the yeast: In the bowl of a stand mixer, combine warm water and sugar. Sprinkle yeast over the top and let it sit for 10 minutes until the yeast is foamy and activated.
- Mix and knead the dough: Add flour, olive oil, and salt to the yeast mixture. Using a dough hook on medium speed, knead the dough until it forms a smooth ball, adding a few tablespoons of flour if necessary.
- Let dough rise: Transfer the dough to an oiled bowl and place it in a warm spot (like inside an oven with just the light on). Let it rise for one hour or until doubled in size.
- Preheat the oven: About 30 minutes into the rise, preheat your oven to 500°F (260°C).
- Deflate the dough: When the dough has doubled in size, gently punch it down to release air bubbles.
- Roll out the crust: Flour a surface well and roll the dough into a 12-inch circle. Transfer it to a pizza stone or baking pan.
- Prepare the cream cheese mixture: Microwave cream cheese until soft and melty, then stir in the ranch seasoning mix until well combined.
- Spread the base: Evenly spread the ranch cream cheese mixture over the rolled-out dough as the sauce base.
- Add cheese: Sprinkle all but 1/4 cup of the shredded mozzarella over the cream cheese layer.
- Prepare buffalo chicken: Toss the chopped cooked chicken with buffalo sauce until fully coated.
- Top the pizza: Distribute the buffalo chicken evenly over the cheese layer, then sprinkle the remaining 1/4 cup of cheese on top.
- Bake the pizza: Place the pizza in the oven and bake for 10 minutes or until the crust is golden brown and cheese is fully melted.
- Garnish and serve: Remove from oven, sprinkle with chopped green onions, and drizzle with ranch or blue cheese dressing if desired before slicing and serving.
Notes
- Ensure the water for activating yeast is warm, not hot, to avoid killing the yeast.
- If you don’t have a pizza stone, using a pizza pan or baking sheet will work just fine.
- Room temperature cream cheese is easier to melt and mix with ranch seasoning for a smooth sauce base.
- Adjust buffalo sauce quantity to taste based on your preferred spice level.
- Let the dough rise in a warm, draft-free environment for best results.
- For a crispier crust, preheat the pizza stone thoroughly before baking.
