Description

A rich and savory Burnt Basque Chilli Cheesecake combining the creamy textures of multiple cheeses with a spicy kick from fresh red chillies. This unique appetizer boasts a golden, slightly burnt crust and a smooth, flavorful interior, perfect for serving with sliced baguette at gatherings or as a gourmet starter.

Ingredients

Scale

Cheeses

  • 330g cream cheese (2 packs)
  • 150g goat cheese (slice off the rind)
  • 200g brie (slice off the rind)
  • 150g blue cheese (slice off any rind)

Other Ingredients

  • 1 tbsp sugar
  • 2 tsp flaky salt
  • 1 tsp black pepper
  • 4 eggs
  • 300ml double cream
  • 2 tbsp all purpose flour
  • 2 red chillies (finely chopped)
  • Butter (for greasing the dish)
  • 1 baguette (to serve)

Instructions

  1. Preheat Oven: Preheat your oven to 220°C (430°F) to prepare for baking the cheesecake at the correct temperature.
  2. Mix Cheeses: In a large bowl, combine cream cheese, blue cheese, brie, and goat cheese (all rinds removed). Use an electric whisk to beat together until the mixture is light and fluffy, ensuring a smooth texture.
  3. Add Seasonings: Add sugar, flaky salt, and black pepper to the cheese mixture. Mix thoroughly to evenly distribute the seasoning.
  4. Incorporate Eggs: Crack the eggs one at a time into the mixture, whisking after each addition until fully combined. This helps achieve a smooth and cohesive batter.
  5. Add Cream, Flour, and Chillies: Pour in the double cream, sprinkle in the all-purpose flour, and add the finely chopped red chillies. Use a hand whisk to combine everything until fully incorporated.
  6. Prepare Baking Dish: Butter a loaf baking dish, including the base and sides. Line the dish with one piece of parchment paper, butter the paper lightly, then add a second piece of parchment paper at an angle for overlap and press it firmly against the dish to ensure it fits snugly.
  7. Pour Mixture: Gently pour the prepared cheesecake batter into the parchment-lined baking dish, smoothing the top slightly.
  8. Bake: Bake in the preheated oven for 45 minutes or until the top develops a golden-brown, slightly burnt crust that indicates it’s cooked through.
  9. Cool and Chill: Remove from the oven and allow the cheesecake to cool at room temperature. Then refrigerate for at least 3 hours until the cheesecake sets and is ready to serve.
  10. Serve: Slice the Burnt Basque Chilli Cheesecake and enjoy it with sliced baguette as a savory appetizer.

Notes

  • Removing the rinds from brie, goat cheese, and blue cheese is crucial for smooth texture and taste.
  • The burnt top is characteristic and adds flavor—do not be alarmed by its dark appearance.
  • The red chillies add a subtle heat; adjust quantity according to your spice preference.
  • Ensure thorough cooling and chilling to let the cheesecake set properly before slicing.
  • Use fresh eggs and quality cheeses for the best flavor and texture.
