Instructions
- Prepare the Brie Shell: Using a cookie cutter smaller than the brie, press it into the wheel without cutting all the way through. Carefully remove the rind from the top of the inner circle with a spoon, keeping the outer edges intact. Gently scoop out the soft interior of the brie and reserve it, leaving enough brie behind to maintain the shape of the shell.
- Create the Wick Opening: Using a cocktail pick, poke a small hole through the bottom center of the brie shell. Twist 4-5 strands of food safe wick tightly and thread it through the hole from the bottom so it extends upward through the center of the brie shell.
- Make the Brie Butter: In a food processor, combine the reserved brie interior, softened butter, roasted garlic cloves, honey, and flaky salt. Process until completely smooth and creamy, scraping down the sides as needed to ensure an even mixture.
- Fill and Set: Spoon the brie butter mixture back into the brie shell, carefully positioning the wick so it stands straight and centered. Smooth the surface with a knife and refrigerate for 30 minutes to allow the filling to set firmly.
- Finish: Once the filling is set, trim the wick to about 1 inch long. Use a knife to create a small divot around the wick to provide space for lighting. When ready to serve, light the brie butter candle and accompany it with crispy bread or crackers.
