Description
This Cabbage Carbonara is a delicious and comforting twist on the classic Italian pasta dish, using roasted cabbage strips in place of noodles. It combines crispy bacon, sautéed onions, and a creamy Parmesan sauce for a low-carb, flavorful meal that’s easy to prepare and perfect for a hearty lunch or dinner.
Ingredients
Scale
Vegetables
- ½ medium head of cabbage (about 5 to 6 cups sliced)
- 1 medium onion, chopped
- 2 garlic cloves, minced
Meat
- 4–5 slices bacon, chopped
Dairy & Seasonings
- ½ cup heavy cream
- ¼ cup Parmesan cheese, grated
- ¼ teaspoon black pepper
- Salt, to taste
- Olive oil, for roasting
Instructions
- Preheat and Prepare Cabbage: Preheat your oven to 400°F (200°C). Slice the cabbage into long, thin strips resembling wide noodles, yielding about 5 to 6 cups.
- Roast Cabbage: Spread the sliced cabbage on a large baking sheet. Drizzle with olive oil, sprinkle with a pinch of salt, and toss to evenly coat. Arrange in a single layer and roast for 10 to 15 minutes until the cabbage softens and edges turn lightly brown.
- Cook Bacon: While the cabbage roasts, heat a large pan over medium heat. Add the chopped bacon and cook for 2 to 3 minutes until it crisps up and releases fat.
- Sauté Onion and Garlic: Add the chopped onion to the pan with bacon fat and cook for 2 to 3 minutes, stirring often, until the onion is soft and translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Make Creamy Sauce: Pour in the heavy cream, then add Parmesan cheese and black pepper. Stir well and allow the sauce to simmer gently for 2 to 3 minutes until it thickens slightly.
- Combine Cabbage and Sauce: Add the roasted cabbage to the pan and toss thoroughly, ensuring every cabbage strip is coated with the creamy sauce. Season with additional salt or pepper to taste.
- Serve: Serve the creamy cabbage carbonara hot as a delicious low-carb alternative to traditional pasta carbonara.
Notes
- For a vegetarian version, omit the bacon and sauté onions and garlic in olive oil instead.
- Use freshly grated Parmesan cheese for the best flavor and smooth melting texture.
- Adjust the roasting time slightly if you prefer softer or crunchier cabbage.
- This dish makes an excellent side or a main meal for a light lunch.
- Leftovers can be refrigerated in an airtight container for up to 2 days and reheated gently on the stovetop.
