Noodles:

  • 2 and 1/2 cups uncooked elbow noodle pasta

Andouille Sausages:

  • 6 andouille sausages, diced

Red Pepper:

  • 1 red pepper, diced

Cheese Sauce:

  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 and 1/2 cups milk
  • 1/4 teaspoon salt
  • 2 8oz blocks of white Cheddar cheese, grated
  • 1 tablespoon Cajun seasoning

Others:

  • 1 tablespoon olive oil
  • Smoked paprika

Instructions

  1. Cook Noodles: Boil water and cook elbow noodles. In a pan, sauté red peppers and andouille until browned. Remove and set aside.
  2. Prepare Cheese Sauce: Melt butter, add flour and salt. Gradually pour in milk, then add shredded cheese and Cajun seasoning. Stir until smooth.
  3. Combine and Bake: Mix noodles, peppers, sausage, and cheese sauce. Transfer to a baking dish. Top with remaining cheese and paprika. Bake and broil until golden brown.
