Noodles:
- 2 and 1/2 cups uncooked elbow noodle pasta
Andouille Sausages:
- 6 andouille sausages, diced
Red Pepper:
- 1 red pepper, diced
Cheese Sauce:
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 1 and 1/2 cups milk
- 1/4 teaspoon salt
- 2 8oz blocks of white Cheddar cheese, grated
- 1 tablespoon Cajun seasoning
Others:
- 1 tablespoon olive oil
- Smoked paprika
Instructions
- Cook Noodles: Boil water and cook elbow noodles. In a pan, sauté red peppers and andouille until browned. Remove and set aside.
- Prepare Cheese Sauce: Melt butter, add flour and salt. Gradually pour in milk, then add shredded cheese and Cajun seasoning. Stir until smooth.
- Combine and Bake: Mix noodles, peppers, sausage, and cheese sauce. Transfer to a baking dish. Top with remaining cheese and paprika. Bake and broil until golden brown.
