Instructions
- Prepare the first rice krispies layer: In a large microwave-safe bowl, combine 3 tablespoons of butter and 4 cups of mini marshmallows. Microwave on high for 1 minute, then stir until smooth. If the marshmallows are not completely melted, continue microwaving in 15-second bursts, stirring after each until fully melted and smooth. Stir 6 cups of Rice Krispies cereal into the melted marshmallow mixture until well combined.
- Form the base layer: Press the marshmallow and cereal mixture evenly into a greased 9×13 inch baking dish. Be careful not to press too hard to avoid compacting the bars, which can make them dense and tough.
- Make the caramel sauce: In a small saucepan over medium-low heat, combine the sweetened condensed milk, unwrapped caramel candies, and 4 tablespoons of butter. Stir frequently until all the caramel candies have melted and the mixture is smooth and glossy.
- Add caramel to base layer: Pour the warm caramel sauce evenly over the base layer of rice krispies in the baking dish. Optionally, sprinkle a pinch of kosher salt over the caramel to enhance flavor.
- Prepare the top rice krispies layer: In another large microwave-safe bowl, combine the remaining 3 tablespoons of butter with 4 cups of mini marshmallows. Microwave for 1 minute, stirring until smooth. If needed, microwave additional 15-second increments until fully melted. Stir in the remaining 6 cups of Rice Krispies cereal until thoroughly mixed.
- Form the top layer: Using a piece of greased wax or parchment paper, gently press the top rice krispies mixture over the caramel layer. Avoid pressing too hard to maintain a light and airy texture.
- Allow to set and serve: Let the layered treat cool at room temperature for at least 2 hours to allow the caramel to set and the bars to firm up before slicing into squares and serving.
