Description

Enjoy a comforting fusion dish with this Cheesesteak Tortellini in Rich Provolone Sauce! Tender cheese tortellini is tossed with sautéed beef, peppers, and onions, then smothered in a creamy provolone cheese sauce. It’s a hearty weeknight dinner that combines classic Philly cheesesteak flavors with cozy pasta comfort.

Ingredients

Scale

Pasta

  • 1 package cheese tortellini (20 oz)

Meat & Vegetables

  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Seasonings

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Creamy Provolone Sauce

  • 2 cups provolone cheese, shredded
  • 1 cup heavy cream
  • 1/2 cup beef broth
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions, usually for 3–5 minutes, until tender. Drain the tortellini and set aside.
  2. Brown the Beef & Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add ground beef, diced onion, green bell pepper, and minced garlic. Cook for 8–10 minutes, stirring occasionally, until the beef is browned and the vegetables are soft.
  3. Season the Mixture: Sprinkle the salt, black pepper, and (if using) red pepper flakes over the beef and vegetable mixture. Stir well to combine all the flavors.
  4. Make the Provolone Sauce: Lower the heat to medium-low. Pour in the heavy cream, shredded provolone cheese, beef broth, and Worcestershire sauce. Stir constantly as the cheese melts into the cream and forms a thick, velvety sauce, about 5–7 minutes.
  5. Combine with Tortellini: Add the drained tortellini to the skillet. Gently toss everything together so the tortellini is evenly coated in the cheesy beef sauce. Warm through for a few minutes if needed.
  6. Serve: Spoon the cheesesteak tortellini onto plates and serve hot, garnished with extra provolone or fresh parsley if desired. Enjoy!

Notes

  • If you prefer, substitute thinly sliced steak for the ground beef for a traditional cheesesteak feel.
  • Try other melty cheeses like mozzarella or white American for a different twist.
  • This dish reheats well on the stovetop with a splash of extra cream or broth.
  • Add sautéed mushrooms for extra flavor and texture.
