  2. Preheat the Pan: Set a cast-iron skillet (or heavy-bottomed nonstick pan) over medium-low heat. Pour in enough vegetable or coconut oil to generously coat the bottom of the skillet. Allow the oil to heat until shimmering but not smoking.
  3. Fry the Fritters: Drop heaping tablespoonfuls of the batter into the hot oil, flattening each slightly with the back of a spoon to form thick, round patties. Cook 3 to 4 fritters at a time, giving them space to spread. Fry for about 2 minutes per side, flipping once the underside is golden brown, then cook for an additional 2 minutes for perfect crispness. Add more oil as needed between batches.
