Roasted Garlic Butter Mixture

  • 1 head garlic
  • 1 drizzle olive oil
  • 6 oz unsalted butter (room temperature)
  • 1/4 cup honey (+ more for topping)
  • 1 lemon (zest only)

  • 1/2 tsp black pepper (adjust to taste)
  • 1 cup parmesan (divided)
  • 1/4 cup chives (chopped, + more for topping)
  • 1 1/2 tbsp rosemary (chopped)

Assembly

  • 1 loaf brioche or Japanese milk bread (not sliced)
  • 8 oz extra sharp white cheddar (sliced, adjust for loaf size)

Instructions

  1. Roast the Garlic: Preheat your oven to 375°F (190°C). Slice the top off the garlic head and drizzle it with olive oil. Wrap the garlic tightly in aluminum foil and roast it in the oven for 1 hour. After roasting, allow it to cool completely before handling.
  2. Prepare the Butter Mixture: Lower the oven temperature to 350°F (175°C). In a bowl, combine the room temperature unsalted butter, honey, lemon zest, salt, black pepper, one-third cup of parmesan, chopped chives, and rosemary. Squeeze the soft roasted garlic cloves from the head into this mixture and stir well until thoroughly blended.
  3. Assemble the Loaf: Using a sharp knife, make slits approximately 1 to 1.5 inches apart on the loaf, slicing down almost to the bottom but not cutting through the base. Spread the garlic butter mixture generously on both sides of each slit and over the exterior of the loaf. Insert one slice of extra sharp white cheddar cheese into each slit.
  4. Bake the Bread: Grate the remaining parmesan over the top of the loaf. Wrap the bottom half of the loaf tightly in foil to help maintain its shape, and loosely cover the top. Bake in the preheated 350°F oven for 25 to 30 minutes. Then, remove the foil from the top and loosen the sides, continuing to bake for an additional 6 to 10 minutes until the top of the bread is golden and bubbly.
  5. Finish and Serve: Once baked, drizzle additional honey over the top of the warm pull-apart bread and sprinkle with extra chopped chives. Serve immediately while warm and gooey.
