- 2+ cups shredded cheddar cheese, divided

Instructions
- Preheat and prepare pan: Preheat your oven to 350° F (175° C) and grease a 9×13 inch baking dish thoroughly to prevent sticking.
- Cook the ground beef: In a medium skillet over medium heat, cook the ground beef, breaking it apart until no longer pink. Season with salt, pepper, garlic powder, or your preferred spices. Once cooked, dab out most of the excess grease using a paper towel to keep the casserole from being oily.
- Mix casserole ingredients: In a large bowl, combine the cooked beef, frozen cubed potatoes with onions and peppers, cheddar cheese soup, cream of celery soup, and half of the shredded cheddar cheese. Stir well to combine all ingredients evenly. Adjust seasoning if desired but keep in mind the soups contain salt.
- Assemble the casserole: Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining shredded cheddar cheese generously over the top, adjusting quantity to your taste.
- Bake covered: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes to allow the casserole to heat through and flavors to meld.
- Bake uncovered and brown cheese: Remove the foil and bake for an additional 15 minutes or until the cheese topping begins to turn golden brown. For an extra bubbly and browned crust, you may turn on the oven broiler for the last few minutes—watch carefully to prevent burning.
