Cheesy Keto Biscuits:

  • 1 (8-oz) block cream cheese
  • 3 cups shredded mozzarella cheese
  • 4 eggs
  • 4 Tbsp baking powder
  • 1⅓ cups almond flour
  • 2 Tbsp melted butter

Instructions

  1. Preheat oven and prepare skillet: Preheat oven to 400ºF. Spray a 12-inch cast iron skillet with cooking spray and set aside.
  2. Melt cheeses: In a saucepan over low heat, melt the cream cheese and mozzarella cheese together until smooth. Remove from heat.
  3. Combine ingredients: In a large bowl, mix the melted cheese with eggs, baking powder, and almond flour until smooth. Let stand for 10 to 20 minutes.
  4. Scoop and chill dough: Using a large cookie scoop, place dough in the cast iron skillet. Refrigerate for 10 minutes.
  5. Bake: Remove skillet from refrigerator and bake for 20 to 25 minutes until golden brown.
  6. Brush with butter: Once baked, brush the biscuits with melted butter.
