Cheesy Keto Biscuits:
- 1 (8-oz) block cream cheese
- 3 cups shredded mozzarella cheese
- 4 eggs
- 4 Tbsp baking powder
- 1⅓ cups almond flour
- 2 Tbsp melted butter
Instructions
- Preheat oven and prepare skillet: Preheat oven to 400ºF. Spray a 12-inch cast iron skillet with cooking spray and set aside.
- Melt cheeses: In a saucepan over low heat, melt the cream cheese and mozzarella cheese together until smooth. Remove from heat.
- Combine ingredients: In a large bowl, mix the melted cheese with eggs, baking powder, and almond flour until smooth. Let stand for 10 to 20 minutes.
- Scoop and chill dough: Using a large cookie scoop, place dough in the cast iron skillet. Refrigerate for 10 minutes.
- Bake: Remove skillet from refrigerator and bake for 20 to 25 minutes until golden brown.
- Brush with butter: Once baked, brush the biscuits with melted butter.
