Cherries and Sauce
- 1 ¼ lb cherries, pitted (half sliced, half whole)
- 4 tbsp unsalted butter
- 1 pinch salt
- 3 tbsp brown sugar (adjust to taste)

- ⅓ cup Luxardo cherries plus 3 tbsp syrup
- 4 oz bourbon

Instructions
- Prepare Cherries: Remove pits from the cherries. Slice half of the cherries in half while leaving the other half whole to create texture variation in the dish.
- Chill Chocolate: Place the dark chocolate in the freezer to firm it up for easier shaving later.
- Melt Butter: Preheat a pan over medium heat for 2 minutes, then add butter and allow it to melt completely.
- Caramelize Cherries: Add the cherries, salt, and brown sugar to the pan. Increase the heat to medium-high and cook the cherries until they begin to caramelize and soften, about 3 to 4 minutes. Stir in vanilla extract, orange zest, and juice, cooking for an additional 3 to 4 minutes to build flavor.
- Add Luxardo Cherries: Stir in the Luxardo cherries along with their syrup, blending the flavors.
- Flambé with Bourbon: Turn the heat to high and carefully pour in the bourbon. It may ignite; stand back and allow the flames to burn off naturally for safety.
- Simmer Sauce: Once the flames subside, reduce heat to medium and simmer the mixture for 3 to 5 minutes until it thickens into a syrupy consistency that coats the cherries.
- Serve: Spoon the warm cherry mixture into bowls. Top each serving with a scoop of vanilla ice cream. Shave the chilled dark chocolate over the ice cream, garnish with edible flowers if desired, and serve immediately to enjoy the contrast of warm sauce and cool ice cream.
