- 1–1/2 tablespoons olive oil
- 2 cups mirepoix (celery, onion, carrot)
- 2 teaspoons minced garlic
- Salt and pepper
- 1 (12-ounce) bag frozen diced vegetables (carrots, sweet peas, corn, and green beans blend)
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon celery seed (optional)
- 2 teaspoons chicken bouillon powder
- 2 cups chicken stock
- 2–1/4 cups whole milk
- 1–1/2 cups orzo pasta
- 2 cups diced rotisserie chicken
- 3/4 cup freshly grated Parmesan cheese
Instructions
- Prepare: Set out all the ingredients and heat olive oil in a large pot over medium-high heat.
- Cook Veggies: Sauté mirepoix, garlic, and frozen veggies until tender. Season with salt and pepper. Set aside.
- Cook: Melt butter, whisk in flour, add seasonings, then gradually stir in stock and milk. Add orzo and simmer.
- Finish Cooking: Stir in the set-aside veggies, chicken, Parmesan, and parsley. Adjust seasoning as needed.
- Serve: Adjust consistency with milk if needed. Top with Parmesan and optional biscuits. Serve hot.
