Description

A quick and flavorful Chicken Zucchini Mushrooms Stir Fry that combines tender chicken with fresh vegetables in a savory soy-based sauce, perfect for a healthy weeknight dinner served over rice or noodles.

Ingredients

Scale

Marinade:

  • 1 tsp cornstarch
  • 1/4 cup light soy sauce
  • 1 tsp sesame oil
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons honey
  • 2 cloves garlic, minced

Stir Fry:

  • 1 tablespoon cooking oil
  • 8 ounces mushrooms, sliced
  • 1 medium zucchini, cut in half lengthwise then sliced
  • 3 cloves garlic, chopped
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp brown sugar
  • 8 ounces chicken breast, thinly sliced (added for clarity)

Instructions

  1. Marinate chicken: In a mixing bowl, combine thinly sliced chicken breast, cornstarch, light soy sauce, sesame oil, rice wine vinegar, honey, and minced garlic. Mix everything well and let it marinate for 30 minutes to enhance flavor and tenderness.
  2. Cook chicken: Heat cooking oil in a wok or large skillet over medium-high heat. Add the marinated chicken along with its marinade. Stir fry for about 2 minutes until the chicken pieces are no longer translucent. Remove chicken from the pan and set aside, keeping the sauce residue in the wok.
  3. Stir fry vegetables: Add a little more cooking oil if needed. Add the chopped garlic, sliced zucchini, and mushrooms to the pan. Stir fry these vegetables for approximately 5 minutes until they are tender but still have a slight crunch.
  4. Combine and finish: Return the cooked chicken to the pan with the vegetables. Add soy sauce, oyster sauce, sesame oil, and brown sugar. Stir fry everything together for another 2 to 3 minutes until the chicken is fully cooked through and the vegetables are tender.
  5. Serve: Serve the stir fry hot alongside steamed rice or noodles for a complete and satisfying meal.

Notes

  • Use fresh garlic for the best flavor, minced garlic is used in the marinade while chopped garlic is stir-fried with vegetables for texture.
  • If you prefer a spicier dish, add red chili flakes or sliced fresh chili when stir-frying vegetables.
  • For a gluten-free version, substitute soy sauce and oyster sauce with gluten-free alternatives.
  • Do not overcook zucchini to maintain a pleasant texture; it should be tender but not mushy.
  • Marinating the chicken helps keep it juicy and tender during cooking.
  • Serve immediately to enjoy the stir fry at its best quality and warmth.
