Chipotle Sauce
- 1 tablespoon chipotle adobo sauce
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon coarse salt

- 2 slices sourdough bread
- 1/4 avocado, sliced
- 2 ounces smoked chicken breast, sliced
- 3 Peppadew peppers, sliced
- 1 tablespoon fresh chopped cilantro
- 1 slice Chao creamy original cheese
- 1 – 2 tablespoons chipotle sauce (prepared from above)
Instructions
- Prepare the Chipotle Sauce: In a small bowl, combine the chipotle adobo sauce, mayonnaise, lemon juice, minced garlic, and coarse salt. Stir thoroughly until the mixture is smooth and well blended. Taste and adjust seasonings if necessary. Set aside.
- Heat the Skillet and Prepare the Bread: Warm a large skillet over medium-high heat. Brush olive oil on the outer sides of each slice of sourdough bread to ensure a golden, crispy exterior during cooking.
- Assemble the Sandwich: Place one slice of bread in the skillet, oil-side down. Layer the sandwich starting with the slice of Chao creamy original cheese directly on the bread, then add the smoked chicken breast slices, sliced avocado, Peppadew peppers, and chopped cilantro. Spread 1 to 2 tablespoons of the prepared chipotle sauce on the inside of the second bread slice, then place it on top, chipotle sauce side down.
- Cook Until Golden and Melted: Cook the sandwich until the bottom slice is golden brown and the cheese begins to melt, about 3 to 4 minutes. Carefully flip the sandwich using a spatula and continue cooking for another 3 to 4 minutes until the other side is also toasted and the cheese is completely melted.
- Serve: Remove the sandwich from the skillet and slice it in half. Serve immediately while warm and enjoy the creamy, smoky, and spicy flavors.
Notes
- Peppadew peppers add a mild sweet heat; they can be substituted with mild pickled jalapeños if unavailable.
- Smoked chicken breast can be replaced with grilled or roasted chicken slices for a different flavor profile.
- Chao creamy original is a vegan cheese; substitute with your preferred cheese if desired.
