Description
Delicious and easy-to-make Chocolate Almond Clusters combining rich semi-sweet chocolate with crunchy roasted almonds, optionally sprinkled with flaky sea salt for a perfect sweet and salty treat. These no-bake clusters are ideal for snacking or gifting and can be set quickly in the fridge.
Ingredients
Scale
Chocolate
- 12 ounces semi-sweet chocolate, roughly chopped
Nuts
- 1 pound roasted almonds (salted or unsalted)
Optional Toppings
- Flaky sea salt, for sprinkling
Instructions
- Prepare Baking Sheet. Line a large baking sheet with parchment paper and set it aside to keep the chocolate clusters from sticking later.
- Melt Chocolate. Place the chopped chocolate in a large heatproof glass bowl. Melt it using a microwave on low power in 15-second increments, stirring thoroughly after each until smooth and fully melted. Alternatively, melt the chocolate using a double boiler on the stovetop.
- Combine Chocolate and Almonds. Whisk the melted chocolate to ensure it is silky smooth. Add the roasted almonds and fold gently with a spatula until each almond is completely coated in chocolate.
- Form Clusters. Using a spoon, scoop out the chocolate-covered almonds onto the prepared baking sheet in clusters about 2 tablespoons in size, or as preferred.
- Optional Salt Topping. Sprinkle a small amount of flaky sea salt over each cluster while the chocolate is still wet to enhance the flavor.
- Set Clusters. Allow the clusters to set completely at room temperature or for faster results, place the baking sheet in the refrigerator until the chocolate hardens.
Notes
- You can use either salted or unsalted roasted almonds depending on your taste preference.
- Microwave melting requires careful stirring and incremental heating to avoid burning the chocolate.
- If you don’t have a microwave, use a double boiler to gently melt the chocolate over simmering water.
- Flaky sea salt is optional but adds a sophisticated, balanced flavor that cuts through the sweetness.
- Store clusters in an airtight container at room temperature or in the fridge to extend freshness.
- Adjust cluster size according to preference; larger clusters may take longer to set.
