- Add dry ingredients: Add the unsweetened coconut flakes, dark cocoa powder, and kosher salt to the mixture. Process again until the mixture is sticky and holds together easily when rolled into balls.
- Shape the truffles: Using a tablespoon, scoop out portions of the mixture and roll them into balls using your hands. Set the balls aside on a plate.
- Coat with almonds: Place the finely chopped almonds in a small dish. Roll each truffle ball in the chopped almonds, pressing gently to ensure the nuts stick to the surface.
- Chill the truffles: Arrange the coated truffles on a plate and refrigerate for about 30 minutes to firm up and set.
