  • 2 tablespoons dark cocoa powder
  • 1/8 teaspoon kosher salt

Instructions

  1. Prepare the dates and extracts: Place the seeded and halved medjool dates along with the vanilla and almond extracts into a food processor. Pulse until the dates are coarsely chopped and combined evenly with the extracts.
  2. Add nut butters: Add the creamy almond butter and coconut butter to the food processor. Process until the mixture is fully incorporated and becomes smoother in texture.
  3. Add dry ingredients: Add the unsweetened coconut flakes, dark cocoa powder, and kosher salt to the mixture. Process again until the mixture is sticky and holds together easily when rolled into balls.
  4. Shape the truffles: Using a tablespoon, scoop out portions of the mixture and roll them into balls using your hands. Set the balls aside on a plate.
  5. Coat with almonds: Place the finely chopped almonds in a small dish. Roll each truffle ball in the chopped almonds, pressing gently to ensure the nuts stick to the surface.
  6. Chill the truffles: Arrange the coated truffles on a plate and refrigerate for about 30 minutes to firm up and set.
