Chocolate No Bake Cookies Recipe

  • Author: Mariam
  • Total Time: 15 minutes
  • Yield: About 24 cookies 1x

Description

These Chocolate No Bake Cookies are a quick and easy treat combining oats, coconut, and rich cocoa, bound together with a sweet buttery syrup. They require no baking, making them perfect for a simple and satisfying dessert or snack that sets as it cools.

Ingredients

Scale

Dry Ingredients

  • 3 cups quick oats
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 5 tablespoons cocoa powder
  • 2 cups granulated sugar

Wet Ingredients

  • ½ cup butter
  • ½ cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the workspace: Spread parchment paper or wax paper on a flat surface such as the counter or on baking trays to prepare for setting the cookies.
  2. Mix dry ingredients: In a large bowl, combine the quick oats, shredded coconut, and cocoa powder thoroughly, then set this mixture aside.
  3. Cook sugar mixture: In a medium saucepan over medium-high heat, combine the granulated sugar, butter, and milk. Bring to a rolling boil and maintain it for 2 minutes, being careful not to boil longer. Remove from heat immediately and stir in the vanilla extract.
  4. Combine mixtures: Pour the hot sugar mixture into the bowl containing the oat mixture. Stir well to ensure everything is fully combined and evenly coated.
  5. Form cookies: Using a 1 tablespoon cookie scoop or spoon, drop spoonfuls of the cookie mixture onto the prepared parchment paper. Allow the cookies to cool completely until they set and firm up.

Notes

  • You can use either sweetened or unsweetened shredded coconut depending on your preference for sweetness.
  • Do not boil the sugar mixture longer than 2 minutes to prevent burning and achieve the right texture.
  • Use quick oats for better texture and ease of mixing; old-fashioned oats may work but could make the cookies less cohesive.
  • Ensure cookies fully cool and set before trying to remove them from the parchment paper.
  • Store cookies in an airtight container at room temperature for up to one week.
