Chorizo Mix:
- 1/2lb / 250g Chorizo, diced
- 1 small White Onion, finely diced
- 2 Jalapeños, deseeded & finely diced
- 1 clove of Garlic, finely diced
- Olive Oil, as needed
Grilled Cheese:
- 8 medium-large slices of Bread
- 8 square slices of Monterey Jack
- 1 cup / 100g Mozzarella, shredded
- 2 small Avocados, halved & sliced
- Butter, as needed
Instructions
- Prepare Chorizo Mix: In a large pan over medium heat, sauté onion, jalapeño, and garlic in olive oil until softened. Add diced chorizo and cook until crispy. Remove mixture and drain on paper towels. Clean pan.
- Assemble Sandwiches: Butter one side of each bread slice. Layer Monterey Jack, chorizo mix, avocado slices, and mozzarella on unbuttered side of half the slices. Top with remaining bread slices, buttered side up.
- Grill Sandwiches: In batches, cook sandwiches on a pan over medium heat until golden and cheese is melted.
Notes
- You can adjust the spiciness by adding more or less jalapeños.
- Use good-quality bread for the best texture and flavor.
