  • 2 tbsp Olive oil (divided)
  • 4 slices Cheddar cheese (optional)

Instructions

  1. Mix the beef and seasonings: In a large bowl, combine the ground beef, Worcestershire sauce, 1 tablespoon of olive oil, and garlic powder. Mix gently to combine, taking care not to overwork the meat which can make the burgers tough.
  2. Form the patties: Divide the beef mixture into four equal portions, shaping each into a ball. Place them on a large plate and sprinkle salt and pepper evenly over the balls. Roll each ball gently to coat the sides with the seasoning that settled on the plate.
  3. Chill the patties: Cover the plate tightly with plastic wrap and refrigerate the beef balls for at least 30 minutes, or up to 24 hours. This helps the flavors meld and firms up the meat for smashing.
  4. Heat the pan: Place a large skillet over medium-high heat and add the remaining 1 tablespoon of olive oil. Heat until the oil is very hot and shimmering.
  5. Smash the burgers: Place one beef ball in the skillet and immediately press down firmly with a large metal spatula, flattening the meat to about 1/4 inch thickness. Repeat with the remaining balls.
  6. Cook first side: Let the patties cook undisturbed for 3-4 minutes, allowing the edges to develop a deep brown, crispy crust.
  7. Flip and add cheese: Carefully slide the spatula under each burger and flip. If using, place a slice of cheddar cheese on each patty now.
  8. Finish cooking: Cook for an additional 1-2 minutes on the second side, until the cheese is melted and the burger reaches your preferred doneness.
