Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper or a silicone mat.
- Cook Sugar Mixture: In a medium saucepan, combine granulated sugar, brown sugar, heavy cream, and butter. Cook over medium heat, stirring constantly, until the mixture reaches 240°F (soft-ball stage) on a candy thermometer.
- Add Flavors: Remove from heat and stir in vanilla extract, toasted pecans, and a pinch of salt.
- Cool and Stir: Let the mixture cool for 5 minutes, then vigorously stir until it thickens and becomes slightly cloudy.
- Shape Pralines: Quickly drop spoonfuls of the mixture onto the prepared baking sheet, spacing them apart.
- Cool and Store: Allow the pralines to cool completely at room temperature until firm, about 30 minutes. Store in an airtight container at room temperature for up to 1 week.
