  • 1 cup chicken broth (240ml)
  • 1 tablespoon soy sauce (15ml)
  • 1 tablespoon brown sugar (15g)
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon vegetable oil (for cooking)
  • Salt and pepper (to taste)

For Serving:

  • 1 cup jasmine rice
  • 2 green onions, sliced (for garnish)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Rinse the Jasmine Rice: Wash the jasmine rice under cold water until it runs clear to remove excess starch.
  2. Cook the Rice: In a pot, combine rinsed rice with water, bring to a boil, then simmer for 15 minutes.
  3. Sear the Chicken: Season chicken with salt and pepper, sear in a pan until golden brown.
  4. Add Flavors: Add garlic, ginger, coconut milk, broth, soy sauce, and sugar to the pan.
  5. Simmer: Let the chicken cook in the coconut mixture for 15-20 minutes until tender.
