- 1 can coconut milk (14 oz or 400ml)
- 1 cup chicken broth (240ml)
- 1 tablespoon soy sauce (15ml)
- 1 tablespoon brown sugar (15g)
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon vegetable oil (for cooking)
- Salt and pepper (to taste)
For Serving:
- 1 cup jasmine rice
- 2 green onions, sliced (for garnish)
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Rinse the Jasmine Rice: Wash the jasmine rice under cold water until it runs clear to remove excess starch.
- Cook the Rice: In a pot, combine rinsed rice with water, bring to a boil, then simmer for 15 minutes.
- Sear the Chicken: Season chicken with salt and pepper, sear in a pan until golden brown.
- Add Flavors: Add garlic, ginger, coconut milk, broth, soy sauce, and sugar to the pan.
- Simmer: Let the chicken cook in the coconut mixture for 15-20 minutes until tender.
- Serve: Slice chicken, place over jasmine rice, and spoon coconut broth over it.
