Instructions
- Prepare Cornflakes Base: Line a baking sheet with parchment paper or a silicone baking mat. Spread the cornflakes evenly on the sheet in a single layer to ensure even coating by the toffee.
- Make Toffee Mixture: In a saucepan over medium heat, melt the salted butter with the packed brown sugar, stirring continuously. Once the mixture is smooth and fully melted, continue cooking for 1-2 minutes while stirring frequently to help it thicken slightly.
- Coat Cornflakes: Carefully pour the hot butter-sugar mixture over the cornflakes on the baking sheet. Gently stir with a heat-resistant spatula to coat all the cornflakes evenly. Then shape the mixture into a rectangle, pressing the cornflakes together firmly.
- Bake the Mixture: Preheat the oven to 350°F (175°C). Bake the coated cornflakes mixture for 9-12 minutes. Check halfway through baking and use a spatula to press the edges towards the center if needed. Baking caramelizes and sets the toffee.
- Cool and Break: Remove from oven and allow the baking sheet to cool completely. The mixture will harden as it cools. Once fully set, break the toffee into pieces of your desired size.
- Melt the Chocolate: Place the chocolate in a microwave-safe bowl. Microwave at 50% power in 30-second increments, stirring after each, until smooth and fully melted.
- Dip Pieces in Chocolate: Dip half of each cornflake crack piece into the melted chocolate, then place on parchment paper to set.
- Optional Salt Sprinkle: For an extra salty-sweet flavor, sprinkle Maldon sea salt flakes over the chocolate-coated side before it hardens.
