Sauce

  • 1 cup cottage cheese, full fat / whole milk
  • 3/4 cup whole milk
  • 1/2 cup shredded parmesan cheese
  • 1 tsp cornstarch
  • 1 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the Pasta: Boil the pasta according to the package directions until al dente. Once cooked, drain and set aside to be combined with the sauce later.
  2. Blend the Sauce Ingredients: Combine the cottage cheese, whole milk, shredded parmesan, cornstarch, garlic powder, dried oregano, and dried basil in a blender. Blend until the mixture is completely smooth and creamy.
  3. Heat the Sauce: Pour the blended cottage cheese mixture into a large pan on the stovetop over low heat. Warm gently, stirring occasionally, for about 5 minutes until heated through and slightly thickened.
  4. Toss Pasta with Sauce: Add the cooked pasta to the warm Alfredo sauce in the pan. Toss everything together to coat the pasta evenly with the sauce. Season with salt and black pepper to your taste.
  5. Serve: Plate the pasta and garnish with extra fresh parmesan cheese, fresh parsley, and freshly cracked black pepper if desired. Enjoy immediately for the best flavor and texture.

Notes

  • If you prefer a thicker sauce, increase the cornstarch to 1.5 teaspoons.
  • You can substitute half-and-half or light cream instead of whole milk for a richer sauce.

  • Reserve some pasta cooking water to loosen the sauce if it becomes too thick.
