Description

A hearty and flavorful Cowboy Stew recipe that combines bacon, ground beef, Kielbasa sausage, vegetables, and spices in a comforting one-pot dish. Perfect for a cozy dinner on a chilly evening.

Ingredients

Scale

Bacon:

  • 6 slices bacon, chopped

Meat Mixture:

  • 1 lb ground beef
  • 1 lb Kielbasa sausage, sliced
  • 1 medium yellow onion, chopped
  • 2 large carrots, peeled and chopped
  • 3 cloves garlic, minced

Spices and Canned Goods:

  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 (10-ounce) cans Rotel tomatoes
  • 2 (15-ounce) cans pinto beans, drained and rinsed
  • 1 (15-ounce) can whole kernel corn, drained
  • 2 cups low-sodium beef broth

Vegetables:

  • 4 medium Yukon Gold potatoes, peeled and diced
  • 3/4 cup frozen peas

Seasoning:

  • Kosher salt and freshly ground black pepper, to taste
  • Chopped fresh parsley or cilantro (optional)

Instructions

  1. Cook the Bacon: In a Dutch oven or large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside.
  2. Brown the Meat: Add the ground beef to the pot, breaking it up with a spatula as it cooks. When the beef is about halfway browned, add the sliced sausage, onions, and carrots. Continue cooking until the beef is fully browned and the onions are soft.
  3. Add the Spices: Reduce the heat to low and stir in the garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute, stirring frequently.
  4. Simmer the Stew: Add the Rotel tomatoes, pinto beans, corn, beef broth, and diced potatoes. Increase the heat and bring the mixture to a low boil. Once boiling, reduce the heat and simmer until the potatoes are tender, about 20-25 minutes.
  5. Finish the Stew: Add the frozen peas and cook for another 2-3 minutes. Season with kosher salt and freshly ground black pepper to taste. If desired, sprinkle with fresh parsley or cilantro before serving.

Notes

  • You can adjust the spice levels by adding more or less chili powder and smoked paprika.
  • Feel free to customize with your favorite vegetables such as bell peppers or celery.
