Chicken:

Sauce:
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 oz cremini or white mushrooms, sliced
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley

Instructions
- Season the chicken: Season chicken breasts with salt and pepper.
- Sear the chicken: In a large skillet over medium heat, heat olive oil and sear chicken until golden brown on both sides (about 4-5 minutes per side). Remove and set aside.
- Prepare the sauce: In the same pan, melt butter and add sliced mushrooms. Sauté until soft and browned. Add garlic and cook for 1 minute until fragrant. Pour in chicken broth to deglaze the pan, scraping up browned bits. Stir in heavy cream, Parmesan cheese, thyme, and parsley. Bring to a gentle simmer.
- Finish the dish: Return the chicken to the pan and simmer for 10–12 minutes, or until chicken is fully cooked and the sauce has thickened. Garnish with fresh parsley and serve hot.
