  • 30 ml orange liqueur or orange juice
  • 200 ml store-bought or homemade crème anglaise (if using your recipe, omit orange and cardamom infusion, and make half)
  • Grated rind of 1 orange

For Topping:

  • Whipped cream

  1. Step 1: Melt the Chocolate – Place a heatproof bowl over simmering water, melt white chocolate until smooth.
  2. Step 2: Prepare the Gelatine Mixture – Dissolve gelatin in boiling water in a separate bowl.
  3. Step 3: Whisk the Egg Whites – Beat egg whites until soft peaks form.
  4. Step 4: Combine Gelatine and Chocolate – Mix gelatine and liqueur into melted chocolate.
  5. Step 5: Add Crème Anglaise and Orange Zest – Whisk in Crème Anglaise and orange zest.
  6. Step 6: Fold in Egg Whites and Chill – Gently fold egg whites into chocolate mixture, chill for 2 hours.
  7. Step 7: Top and Serve – Garnish with whipped cream before serving.
