For the Mousse:
- 180 grams white chocolate
- 3 tablespoons hot water
- 1½ teaspoons gelatin powder
- 4 egg whites or from 3 larger eggs
- 30 ml orange liqueur or orange juice
- 200 ml store-bought or homemade crème anglaise (if using your recipe, omit orange and cardamom infusion, and make half)
- Grated rind of 1 orange
For Topping:
- Whipped cream
Instructions
- Step 1: Melt the Chocolate – Place a heatproof bowl over simmering water, melt white chocolate until smooth.
- Step 2: Prepare the Gelatine Mixture – Dissolve gelatin in boiling water in a separate bowl.
- Step 3: Whisk the Egg Whites – Beat egg whites until soft peaks form.
- Step 4: Combine Gelatine and Chocolate – Mix gelatine and liqueur into melted chocolate.
- Step 5: Add Crème Anglaise and Orange Zest – Whisk in Crème Anglaise and orange zest.
- Step 6: Fold in Egg Whites and Chill – Gently fold egg whites into chocolate mixture, chill for 2 hours.
- Step 7: Top and Serve – Garnish with whipped cream before serving.
