Ingredients
Brown Rice:
½ cup dry brown rice
Red Onion:
1 small red onion (diced)
Kale:
1 medium bunch kale (stems removed, leaves finely chopped)
Olive Oil:
1 tbsp olive oil
English Cucumber:
1 english cucumber (diced)
Walnuts:
½ cup walnuts (chopped)
Panko Breadcrumbs:
½ cup panko breadcrumbs
Brown Lentils:
1 can brown lentils (rinsed and drained)
Feta Cheese:
1 cup feta cheese (crumbled)
Dill Pickles:
3 dill pickles (diced)
Green Onions:
3 green onions (thinly sliced)
Fresh Dill:
2 tbsp fresh dill (chopped)
Creamy Dill Pickle Dressing:
1 batch of creamy dill pickle dressing
Instructions
- Cook Brown Rice: Prepare rice according to package instructions. Once cooked, set aside to cool.
- Soak Red Onions: Place diced red onions in a small bowl, cover with 1 cup of cold water, and let sit for 5 minutes before draining.
- Prepare Salad Base: In a large mixing bowl, massage kale with olive oil until soft. Add brown rice and mix well.
- Combine Ingredients: Add cucumber, walnuts, breadcrumbs, lentils, feta cheese, dill pickles, green onions, fresh dill, and soaked red onions. Drizzle with creamy dill pickle dressing and toss to combine.
