  • 2 ripe bananas (150g/5oz after peeling, ~2/3 cup mashed)
  • 1/2 cup peanut butter (smooth or creamy)
  • 1/3 cup honey
  • 2 eggs
  • 1 1/2 cups flour (all purpose/plain OR wholewheat/wholemeal)
  • 2 1/2 tsp baking powder
  • 1/4 cup oil (vegetable, canola, peanut or olive oil)
  • 3/4 cup water

Frosting Ingredients

  • 500g / 1lb potatoes (peeled and cut into 2 cm/1″ pieces)
  • 2 tbsp honey
  • 1/2 cup plain low fat yogurt (any unsweetened type) OR sour cream
  • 24 tbsp water

Decoration

  • 12 small dog bone biscuits (optional)

Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 180°C/350°F (160°C fan). Line a 12-hole muffin tin with cupcake liners to prevent sticking and ease removal.
  2. Mash the bananas: Place the peeled ripe bananas into a bowl and mash thoroughly with a potato masher until you achieve a smooth consistency with minimal lumps.
  3. Mix wet ingredients: Add the peanut butter, honey, and eggs to the mashed bananas. Whisk these ingredients together well until the mixture is creamy and smooth.
  4. Add dry ingredients and oil: Stir in the flour, baking powder, oil, and water. Continue whisking until all ingredients are fully combined and the batter is smooth and slightly runny.
  5. Fill muffin tin: Divide the batter evenly among the cupcake liners, filling each about three-quarters full to allow room for rising during baking.
  6. Bake the cupcakes: Place the muffin tin in the oven and bake for 22 minutes. The cupcakes are done when the tops turn golden and a skewer inserted into the center comes out clean.
  7. Cool cupcakes: Transfer the baked cupcakes to a cooling rack and let them cool completely for about 30 minutes before frosting them.
  8. Prepare the frosting – cook potatoes: Put the peeled and chopped potatoes into a large pot filled with water and bring to a boil. Cook for 20 minutes or until the potatoes are very soft and beginning to crumble on the edges.
  9. Make frosting: Drain the potatoes well and return them to the empty pot. Add the plain yogurt, honey, and start with 2 tablespoons of water. Using an electric mixer, beat the mixture for 1 minute on speed 3, then increase to speed 5 and beat for another minute until the frosting is smooth and creamy. Add more water if necessary to achieve a soft, spreadable consistency similar to conventional frosting.
  10. Pipe and decorate: Spoon the frosting into a piping bag fitted with a 1.5 cm (3/5 inch) round nozzle. Pipe swirls onto each cooled cupcake. Optionally, top each cupcake with a small dog bone biscuit for decoration and extra crunch.
