- 4 (6-7 oz) boneless, skinless chicken breasts
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup basil pesto (divided)
- 1 cup shredded mozzarella cheese
Instructions
- Preheat Oven: Preheat the oven to 375 degrees F.
- Cut and Season Chicken: Cut each chicken breast lengthwise into 3 pieces. Season the chicken strips with salt and pepper.
- Prepare Baking Dish: Spray a 9×12 baking dish with cooking spray. Spread 1/4 cup of pesto over the bottom of the dish.
- Assemble Chicken: Add the chicken strips to the dish and top with the remaining 1/4 cup of basil pesto.
- Bake: Cover the dish with foil and bake at 375 degrees F for 25 minutes.
- Add Cheese: Uncover the dish, sprinkle with mozzarella cheese, and bake for an additional 5 minutes or until the cheese is melted and chicken is cooked through.
- Broil (Optional): If desired, broil the dish for 2-3 minutes until lightly browned.
- Serve: Serve the pesto chicken hot, drizzled with extra juices from the dish.
