Truffle Base

  • 285g / 10 oz dark chocolate melts (chocolate chips, or chocolate block coarsely chopped)
  • 2 tbsp (30g) unsalted butter
  • 1/2 cup (125ml) cream (full fat, not low fat, not whipped)

Coatings

  • 1/2 cup desiccated coconut
  • 1/4 cup unsweetened cocoa powder (Dutch Processed is darker, looks “posh”)
  • 1/2 cup crushed peanuts (small, so can stick)
  • 1/3 cup sprinkles or similar
  • 1/4 cup icing sugar / powdered sugar

Instructions

  1. Combine Ingredients: Place chocolate, cream, and butter in a microwave-proof bowl. Microwave on high in four 30-second bursts, stirring between each until mixture is warm and partially melted.
  2. Make Ganache: Cover the bowl with a plate and let it stand for 5 minutes. Stir until the chocolate is fully melted and the mixture is smooth and glossy, forming a ganache.
  3. Chill Ganache: Refrigerate the ganache for 6 hours to allow it to firm up properly. Avoid freezing as it affects texture.
  4. Prepare Tray: Place a dinner plate or tray for the rolled truffles in the fridge to chill.
  5. Prepare Coatings: Place the cocoa powder and other coatings of choice into small bowls or plates for rolling.
  6. Check Ganache Firmness: Remove ganache from fridge; it should be firm but pliable—similar to softened butter.
  7. Set up Rolling Station: Place an ice pack or frozen peas bag on the bench covered with paper towels to chill your hands while rolling.
  8. Scoop and Roll: Use a tablespoon measure to scoop ganache, then a teaspoon to transfer it into your hands. Roll quickly into balls and place each on the chilled tray. Chill hands as needed to prevent melting.
  9. Coat Truffles: Roll each truffle ball in cocoa powder or your chosen coating to evenly cover them.
